Roasted Asparagus & Cauliflower Soup

I love soup. It is nourishing, comforting and perfect for the cold winter weather. This roasted asparagus and cauliflower soup is one I make almost weekly to have in the fridge for a quick meal. When my digestive system is feeling sluggish, I like to replace a meal a day with an easy to digest soup. This one is easy and delicious and packed with powerful nutrients found in asparagus and cauliflower. It aids the body in weight loss, helps deeply cleanse your liver, and reduces inflammation.

Recipe:
Roasted Asparagus and Cauliflower Soup
1 bunch of asparagus
1 head of cauliflower
1 yellow onion
4 cloves of garlic
2 tbsp olive oil
5 cups of chicken or vegetable stock
1 lemon
Salt and pepper to taste
Parsley for garnish
⁃ Preheat the oven to 425F.
⁃ Coat a large baking sheet with olive oil and add chopped cauliflower and asparagus. Bake for 20-25 mins.
⁃ In a large pot, add olive oil, chopped onion and garlic and sauté for 5-7 mins until onions are translucent.
⁃ Once the cauliflower and asparagus are done, chop the asparagus into smaller pieces and add cauliflower and asparagus to the pot with chicken stock, and a the juice of half the lemon.
⁃ Add salt and pepper to taste.
⁃ Bring to a boil for 8-10 mins.
⁃ Add to blender and blend until puréed.
⁃ Add parsley to garnish and more lemon, salt and pepper to taste.
